Nuff Hotels Already

Whenever anyone at my church or any of my friends hear I am going to Oahu they inevitably encourage me to visit two iconic Oahu locations. Both of these locations happen to be on the North Shore around the town of Haleiwa. If you have ever been to Oahu you have likely made the trek to one or both of these historic North Shore landmarks.

Your friends have likely told you that no trip to the North Shore is complete without a pitstop at Matsumoto’s for their world famous shave ice. People make it sound like, in the entire world,  you can only buy shave ice at this one place. The first comment my kids made about their shave ice experience was that it was a snow cone. While these are better than a snow cone, I am not sure if I was staying in Honolulu if this would be worth the hour and a half drive. There are also about a dozen shave ice places in the small town of Haleiwa. You almost have to wonder why they don’t get any street credibility!

Though I don’t find Matsumoto’s shave ice terribly exciting, I find myself there at least once every time I am in Oahu. It is a historic landmark. You have to experience it.

The other historic location is the famous Ted’s Bakery. Everyone says they have the best donuts. “Their coffee is amazing!” “I stop there every morning!” “You have to try their world famous chocolate haupia cream pie!” So, of course, every time I stay at Turtle Bay I have to stop off at Ted’s a few times during the trip. In reality, the coffee is OK. The donuts are about as good as what you can find at Albertsons. (I suppose they taste better because you ARE in Hawaii. Everything seems to be much more glorious there.) This past trip I tried the chocolate haupia cream pie. It was good.

If Ted’s was in Seattle, it probably wouldn’t stay open for longer than a month but you HAVE to stop by there if you are staying on the North Shore. I couldn’t imagine a trip not going there.

I would like to add a third North Shore iconic stop. The famous “Nuff Hotels Already” sign. I have stayed at the Turtle Bay Resort three different times. Each time I anticipate seeing the hand-painted landmark that lets me know I am almost to my “vacation home.” Since some time, someone, somewhere decided Ted’s was a place you have to stop to get coffee and Matsumoto’s shave ice is a required refreshment. So they started telling their friends, their friends started telling their friends and so on… Until finally, these little hole-in-the-wall dives became as prominent to some visiting Oahu as the Pearl Harbor Memorial or the Dole Pineapple factory.

I would like to start the “NUFF HOTELS ALREADY” photo opportunity trend! So next time you travel to Oahu and make the drive up the Kamehameha Highway to the North Shore, be sure to pull over and get a quick photo at the “NUFF HOTELS ALREADY” sign. Just like Matsumoto’s has the greatest shave ice, Ted’s has the greatest pie, this is the greatest photo opp sign EVER! You can find it just a few miles north of Ted’s Bakery.

Your Kamehameha Highway expedition should not only include stops at Matsumoto’s and Ted’s but also “NUFF HOTELS ALREADY.”

Vegas Day Three: The Alone Day

If we have learned anything from Clark W. Griswold we have learned that whenever you are in Vegas you must have an alone day. A day when everyone in your group gets to experience Las Vegas in their own way. Today was our alone day. The following pictures illustrate how each one of us celebrated Las Vegas in our own way.

Morgan spent his alone day huddled in a fetal position weeping because of how much he missed his wife. This was one of the few moments during the day where Morgan wasn’t crying.

Christian spent his special day spending his children’s inheritance at Starlight Tattoo.

My special day was spent running around the Mandalay Bay trying to find fighters. Some people might call it harassing, I call it the ultimate in fan admiration. Here I am with Kenny Florian.

And with the MMA Hall of Famer Bas Rutten.

And the former UFC light heavyweight champ, The Huntington Beach Bad Boy Tito Ortiz. Please don’t tease me about my beastly huge binder, I am fairly insecure about it.

Travis was so deeply moved and inspired by Carrot Top’s performance on Thursday evening that he decided to follow in the comedians footsteps and begin his life long pursuit of opening for Joe Rogan. Travis made an assortment of politically incorrect puns and witty statements. Joe thanked him for warming up the crowd.

This “brothers don’t shake hands, brothers hug” moment was the only time we saw Nick on Friday. His brother Scott arrived from Seattle and the siblings took off for the poker room never to be seen again. Rumor has it Scott did much better at the tables.

Day three of our Vegas vacation is officially in the books. It was memorable to each of us in our own way. Saturday is fight day!

Vegas Day Two: A Picture Tribute to Nick’s Birthday

Fight Week in Las Vegas has been a little odd this week. The casinos are pretty empty. Everyone keeps telling us it is because of the storms in the mid-west. Apparently flights keep getting canceled and people are have to reschedule or cancel their Super Bowl vacation plans. I am just hoping I can get an upgraded room but I digress….

Today was Nick’s 33rd (Christian thinks 36th but I’m going with 33rd) birthday. Here is my personal tribute to Nick on this normally insignificant birthday.

Since Chris Boone woke me up at 6:30am I figured I would wake Nick up on his special day. I called several of his friends and had them sing happy birthday to him on speaker phone.

After Nick finally got ready we went over to Travis and Morgan’s room and woke them up. Travis greeted Nick with a big huge birthday hug. Nothing says “happy birthday” better than a warm embrace by a bare-chested, husky, hairy man.

My birthday gift to Nick was breakfast at the Red, White, and Blue cafe at the Mandalay Bay. Is it me or does Morgan look like a balding oompa loompa in this picture. I find it very disturbing. To make matters worse Morgan only ordered two donuts for breakfast.

Nick spotted his favorite fighter Shogun Rua while we were eating breakfast and ran over and got his picture taken with him.* Nick was ecstatic and claimed this was the best birthday ever.

The middle of the day everyone went their separate ways. I really have no clue what Nick was doing from 10am to 2pm. All I know is when I finally saw him again he had a scratch on the side of his head, his nose was pierced, and he was wearing bell bottoms. (OK, the truth was Nick took a nap but that would have made for a boring blog.)

We went to dinner at the Burger Bar and afterward went to see Carrot Top. Don’t worry, we didn’t pay for it. Some lady walked by and gave us all free tickets. I told Nick this was an additional birthday present. Nick found Carrot Top hilarious. Travis, on the other hand, fell asleep during his act.

Nick decided to end the day of his 33rd (36th if Christian is right) birthday by playing some roulette. I have to be honest and admit I don’t understand roulette. All I know is occasionally….

Nick was sad…

and minutes later he was elated.

I just knew roulette was boring to watch, especially when the guy you are watching is betting a dollar at a time. I finally said good bye and went back to doing what I enjoy…..connecting with fighters. Me with The Ultimate Fighter winner Court McGee.

That is it for Nick’s 33rd birthday. Tomorrow we have the weigh ins, Q and A’s, and a bunch of autograph signings. UFC 126 is getting closer.

While I was getting my tattoo worked on I overhead the artists talking about a side bet between Forrest Griffin and Rich Franklin. Apparently if Forrest wins the fight Rich has to get a griffin tattooed on his arm. If Rich wins Forrest has to get an ace of spades tattooed on his arm. That should add an extra level of intrigue to their fight!

My Kid’s Baptisms

Rachelbaptism My job has many benefits. One of the greatest "perks" of being a minister was the privilege of baptizing my kids. Rachel got baptized a couple years ago when our church was still meeting at Jackson High School. Elijah got baptized this last June after church one Sunday. Judah got baptized a couple months later at our church's Day at the Lake Event.

Baptism is a significant spiritual mile marker in every Christian's life. It is the moment where you make a public declaration of your faith in Jesus Christ. As parents, Di and I have tried to be the best example we can to our kids but we ultimately have allowed our kids to discover their faith on their own. Getting baptized was an individual decision for each of them.

I am a happy (and proud) dad.
